Ingredients: 100 g organic carrots 150g ground almonds 1 tablespoon ground cinnamon 1 tsp ground ginger 1 tsp ground nutmeg 3-4 tablespoons melted raw organic coconut oil 100 g raisins, soaked in hot water for 30 minutes 5 dates 2 tablespoons chopped walnuts 50g desiccated coconut plus extra for coating 1 tablespoon honey or maple syrup
Method: In your blender or food processor mix all the ingredients. Form little balls and coat with desiccated coconut. Refrigerate for 30 min. before serving.
